Black Bean Brownies (Vegan Friendly)

As the New Year unfolds, many embark on a journey to embrace healthier eating habits. The challenge, however, lies in finding treats that not only contribute to your well-being but also still taste delicious. These Black Bean Brownies will shock you! I totally understand the skepticism you may have at the idea of incorporating black beans into a dessert; however, trust me on this one.

These Black Bean Brownies are so decadent that no one will ever know there is anything missing.

I found a recipe hack that I had to try for myself.  What if I told you that you could make brownies without using butter, oil or even eggs?  These brownies are moist, high in fibre and protein.  This recipe is a great option for people with allergies to eggs and dairy products as well.

What is the secret ingredient that makes these brownies so moist?

Have you heard the rhythm, “beans, beans, the magical fruit ….”?  Yes, you won’t even believe it but black beans are used in this recipe to replace the oil/butter and eggs. The black beans make these brownies moist and fudgy so they sure must be magical.

Have you heard of the Black Bean Brownie Mix hack?

When I saw the trend online of adding 1 can of black beans to a brownie mix, I thought I could just make my own brownies at home.  Who needs a box mix. I figured I had nothing to lose.  

Crazy enough, the brownies turned out perfect.  My son and husband both tried them and could not believe there were black beans in these brownies.  No one would ever know.

In order to stick to new routines, it’s important to find ways to eat relatively healthy food.  I have a HUGE sweet tooth so I’m always looking for new recipes to try to satisfy my cravings.

Ingredients

  • ¾ cup cocoa powder (unsweetened for baking) 
  • 1 cup flour (I use All Purpose Flour)
  • 1 ½ cups sugar (or substitute with 1 ½ cups of maple syrup – see below)
  • 15 oz can black beans (drained and rinsed)
  • ¼ cup black coffee (cooled completely) 
  • 1 teaspoon vanilla extract
  • ½ cup water 
  • Chocolate chips (vegan can be substituted).  You could also add chopped walnuts instead of chocolate chips. Walnuts have multiple health benefits as well. 

Instructions

  1. In a bowl, add flour, sugar and cocoa powder.  Mix with a fork until blended.  Set aside. *If you maple syrup, omit sugar in this step*
  2. In a food processor or blender (I use a Ninja) add black beans, coffee and vanilla, *and maple syrup if using instead of sugar).  Blend until the beans are well blended. The mixture will be smooth.  You don’t want to see any bean skins.   
  3. Add the bean mixture to the bowl with your flour mixture and add water. Mix until well blended.   
  4. Pour the batter into a 8×8 pan lined with parchment paper. Sprinkle with chocolate chips or nuts.
  5. Bake in a preheated 325 F degree oven for 25-28 minutes.  You only want to bake the brownies until the edges appear done. The middle of the brownies can look slightly under cooked. If you over bake the brownies they will be dry.  Moist and gooey brownies are so much more delicious. If they are slightly under cooked it’s okay.
  6. Allow brownies to cool completely before cutting.  *TIP:  Once the brownies are cooled, use a plastic knife to cut the brownies.  A plastic knife prevents the brownies from falling apart when cutting.*
