Butternut Squash Soup Recipe (Vegan Option)

Is Butternut Squash Soup hard to make?

As fall approaches and the weather starts to get cooler outside, I often feel more like cooking and baking.  Believe it or not, one of our favourite fall things to eat is butternut squash soup.  Soup is such a comfort food. Apple crisp ranks pretty high too but butternut squash soup is a lot healthier! 

This year we were fortunate enough to have had a great harvest of butternut squash from our garden.  Last year our pumpkin patch took on a life of its own and took over the butternut squash. I decided to scrap the pumpkins and just grow squash this year.

Is butternut squash soup healthy?

Making soup is not hard. Butternut squash itself is high in vitamin A and vitamin C.   The recipe I’m sharing with you below is really healthy. When looking for a soup recipe you want to be cautious about what is added to the soup. Some recipes can be high in sodium and fat.

Homemade soup really hits the spot on those cool days when you have been working outside and just need something to warm you up.  Plus, it’s a fast meal to prepare when you are running off to some sort of after school activity.  We spend many hours in hockey arenas during the winter months. Soup often comes in pretty handy when we are rushing to get out the door!

Can you eat the skin from butternut squash?  

Apparently you can eat the skin from butternut squash.  I personally don’t.  You may want to roast your squash in the oven if you are going to use the entire squash in your soup.

Ingredients

  • 1 medium sized butternut squash
  • 3 medium sized potatoes (peeled & cut into small pieces)
  • 2 tablespoons of butter (plant based can be substituted or omit)
  • 2 cloves garlic (minced)
  • 1 medium sized onion (diced)
  • 1 red apple, peeled and cut into small pieces
  • 900 mL (1 container) of chicken or vegetable broth
  • 1/2 teaspoon celery salt
  • 1/4 teaspoon black pepper
  • pinch of red pepper flakes (optional)
  • 1 teaspoon brown sugar
  • 1/2 teaspoon dried parsley

Instructions

First wash a medium sized butternut squash. If the squash seems to be large, just use half.

Next remove both ends of the squash using a sharp knife. If you are going to cook the squash in the microwave, use a pairing knife and place a few slits in the squash so the air is able to escape while cooking.

Place the squash in a shallow dish in the microwave with approximately 1/4 cup of water in the bottom of the dish. Cook the squash for 5-8 minutes. The squash will be so much easier to cut if you do this first.

Remove the squash from the dish with oven mitts and place the squash on a cutting board. Cut the squash in half (length wise). Remove all the seeds. Place the 2 pieces of the squash back in the swallow dish. Make sure there is still a bit of water in the bottom of the dish. Continue to cook for an additional 8-10 minutes or until you are able to cut the squash easily. 

Next remove the skin and cut the squash into small pieces. Place the pieces of squash and the remainder of ingredients into a large stock pot. Simmer on medium/low heat for approximately 30 minutes or until the vegetables are tender. 

Once the vegetables are tender, transfer the soup to a blender or use a stand blender to blend the mixture to your desired consistency. You may want to add additional salt and pepper to taste. We don’t eat a ton of salt.

What do you pair butternut squash soup with?

You can’t just have soup!  So, what should you serve with your butternut squash soup?  My absolute favourite is butternut squash soup and homemade tea biscuits.  I love plain or cheddar tea biscuits.  

This butternut squash soup recipe is quite easy to make.  If you are not going to eat it right away you can always put the leftovers in individual containers in the freezer to enjoy later.
